Big leaf maple honey is one of the most distinctly Seattle honeys you can find. It is harvested from hives kept at the UW Center for Urban Horticulture (UWCUH), a 74-acre botanical research site in the University District where big leaf maple trees grow in dense groves along the trails and wetland margins. When the maples bloom in early spring, the hives fill fast.
Big leaf maple honey pairs well with mild soft cheeses, stirred into oatmeal, drizzled over yogurt or fresh fruit, or used anywhere you want honey flavor without overpowering the dish. It also makes a clean, floral mead base. The lighter flavor makes it especially good for baking when you want the honey to complement rather than compete.
